You can literally celebrate National Watermelon Day by having watermelon for all your meals. Have a big glass of watermelon juice for breakfast; enjoy a watermelon, feta cheese, and mint salad for lunch; and make watermelon salsa to go with your fish for dinner. And finally, top it off with sparkling water and a mint sprig for a refreshing way to end of the day.
Florida Watermelon Fizz
INGREDIENTS
5 cups Florida Watermelon (seeded and cubed)
2 cups Sparkling Water
1 Lemon, Juiced
Florida Honey, to taste
Fresh Mint Sprigs for Garnish
INSTRUCTIONS
Add watermelon, honey, and lemon juice to a blender and process until smooth. Strain puree through a fine sieve. Fill 4 glasses with ice. Evenly distribute the strained juice into each glass. Top each glass with sparkling water and stir once.
Scoop a couple of watermelon balls and skewer with fresh mint sprigs to garnish.
